With that being said I pulled out some jars of my favorite homemade hot sauce. I made this during the summer and canned it to save for an occasion just like this one. All of the ingredients come together to make a delightfully sweet, smoky, slow burning hot sauce that is great on everything from chips to burritos, or just straight if your into that sort of thing. But as it turns out its especially delicious on crispy chicken wings. There are a good amount of ingredients in this recipe but don’t be intimidated, this recipe is super straight forward and not complicated to toss together. So the following is the recipe for the hot sauce and instructions on how to use it on those succulent chicken wings.

The recipe makes quite a bit of sauce so if you aren’t planning on putting it in jars and saving it I would cut this recipe in half for about 2-3lbs of chicken wings.

  • 3 ea Habanero peppers
  • 6 ea Red bell peppers
  • 1 ea Small pineapple diced
  • 15 ea Tomatoes (medium) cut into quarters
  • 1 ea Onion cut into quarters
  • 2 ea Serrano peppers seeds left in
  • 1/2 bulb Garlic peeled

Roast all the above ingredients together in a 440 degrees F oven for about 10 minutes or until the ingredients are caramelized, place into a blender, blend till smooth and then add

  • 1 C Sugar
  • 7 mint leaves chopped fine
  • 2 Spigs parsley stems removed and chopped fine
  • 5 Basil leaves chopped fine

Mix all the ingredients thoroughly. Now to the chicken wings!

Heat a sturdy pot filled with about 1 inch of vegetable oil to 350 degrees F. Never fill your pot over half full, this can be dangerous to work with. If the oil is getting too hot add in a little more vegetable oil to bring the temperature down. If you don’t have a thermometer that reaches that high of a temperature drop a little piece of the chicken in and when it bubbles vigorously it is ready to fry. Drop half the chicken in with metal tongs or carefully place each piece in making sure it splashes away from you, move quickly because the chicken will be bubbling and may get you a little. Fry the wings for 5-7 minutes until golden brown and cooked through. Place on a plate lined with a paper towel to get rid of excess oil and then while still warm toss the wings in a bowl of your beautiful hot sauce. Then repeat with the other half of the wings. That’s it! Serve with ranch or blue cheese and a celery stick or two. Now your ready for the big game or any day of the week! So enjoy and as always get out there and Crusch It!
